1 cup butter
2 cups sugar
4 eggs
2 1/2 cups sweet potatoes, mashed
3 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 cup pecans, chopped
1 tsp. vanilla extract

Directions:
Directions:
Cream butter and sugar, then add eggs, one at a time, beating well after each addition. Mix in sweet potatoes. Sift together flour, baking powder, salt, baking soda, cinnamon and nutmeg. Add flour mixture slowly to butter mixture, beating after each addition. Stir in nuts and vanilla. Pour into large bundt pan.

Bake at 325º for 1 1/2 hours. Slice and serve.

So moist and spicy and "fall-wintery". Just wonderful with steamed coffee or hot chocolate. A treat to tummy and soul!
