2 Tbsp. unsalted butter or olive oil
1/2 onion, chopped,
2 cloves garlic, chopped
2 cups low sodium chicken or vegetable stock
14 oz can or 8 medium chopped tomatoes with skin removed
2 tsp fresh basil, chopped

Directions:
Directions:
Saute the onion and in butter/oil and cook 5 minutes. Add garlic for last 2 minutes. Add tomatoes and vegetable or chicken stock. Bring to a boil. Reduce to low, cover and simmer 20 minutes. Pour soup into food processor or blender and process until smooth. Return to pan and stir in fresh basil. Reheat gently to serve. Garnish with fresh basil leaves.
