2 5-6 ounce firm fish fillets or steaks, about 6 ounces each (or one large fillet, cut in half)
1 cup cooked rice
2 cups chopped bok choy (Chinese cabbage) or pointed cabbage, coarsely chopped
1 small can water chestnuts, sliced
2-6 shiitake mushrooms, sliced
2 scallions, chopped
1 Tbsp. vegetable oil
1 tsp. grated fresh ginger root
1- 2 garlic clove, minced or pressed
2 Tbsp. soy sauce
2 tsp. sesame oil
chili oil (optional)

Preheat oven to 450º.
Take two 12 x 24-inch sheets of aluminum foil and fold each sheet of foil over to make a double-thick square. Brush a little oil in the center of each square. Rinse fish and pat dry. Spread half of rice on center of each foil square. Then layer the cabbage, water chestnuts, mushrooms, fish and scallions on top of rice. In small bowl, combine the vegetable oil, ginger, garlic, soy sauce, sesame oil, and few drops of the optional chili oil. Pour half of sauce over each serving. Fold foil into airtight packets. Bake for about 20 minutes. To serve, transfer contents to plates.
