1 large (or 2 small jars) pickled herring – rinse and cut into small pieces.
3 large boiled potatoes – cubed
4 pickled beets - cubed
2 pared apples apples – cubed
1 Tbsp. minced onion
1 stalk celery – diced
1 dill pickle – diced

Directions:
Directions:
Mix together and combine with other ingredients: 1 cup sour cream, 3 Tbsp. sugar. 1 Tbsp. vinegar. ¼ tsp. salt, ¼ tsp. pepper, 1 Tbsp. pickled beet juice.

Place in large bowl lined with lettuce leaves, Garnish top with hard boiled egg slices and sliced beets. Best made the day before. Stir it 2-3x before serving so pink color darkens and spreads evenly.
