1/4 cup lemon juice, freshly squeezed
1/2 tsp. sugar
1 tsp. Dijon mustard
1 small garlic clove, pressed
3/4 cup olive oil
Salt and pepper (to taste)
1 whiff of cayenne pepper
Directions:

Mix lemon juice, sugar and mustard; whisk well. Add garlic; whisk well. Pour in olive oil slowly and whisk well. Add salt, pepper and cayenne; whisk well.

Joe loved this dressing so much, he wanted to bottle it! In my opinion, lemon juice is preferable to vinegar, always.
