3 eggs
1 cup cooking oil
2 cups sugar
2 cups zucchini, ground
2 tsp. vanilla
3 cups flour, sifted
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 cup nuts, chopped

Directions:
Directions:
Grease and flour two loaf pans. Beat eggs, add oil, sugar, zucchini and vanilla and cream together. Mix flour, baking soda, baking powder, salt and cinnamon. Add flour mixture to creamed mixture and mix thoroughly until blended. Add chopped nuts.

Bake in greased loaf pans at 325º for 1 hour.

Vergia Powell was my husband Joe's sister. She picked the zucchini right out of her garden in Denver, Colorado and gave us a loaf and the recipe for Christmas one year. Wonderful toasted!
