1 - 10 oz. pkg. frozen, chopped spinach, thawed and drained
1/2 cup sour cream
Dash of white wine vinegar
1 cup sharp Cheddar cheese, grated
1 lb. fresh mushrooms (about 2 boxes)
4 tbsp. butter
Romano cheese, shredded

Directions:
Directions:
Mix spinach, sour cream, wine vinegar, and Cheddar cheese; set aside.

Wash mushrooms and dry with a damp cloth. Remove stems. Melt butter and dip each mushroom into butter to coat. Fill each mushroom cap with about 1 teaspoon of spinach mixture. Sprinkle with Romano cheese. Bake at 350º for 15 minutes.

If using as a side dish, use large mushrooms. If using as cocktail fare, you may want to use smaller mushrooms. Do not clean mushrooms until ready to use. The spinach mixture can be prepared the day before and refrigerated.
