1 pie shell
3-4 medium fresh tomatoes
butter
3-4 slices of bacon fried and diced, can use ham or Italian sausage
chopped basil
chopped bell pepper (optional)
chopped parsley (optional)
1/4 cup mayo
1 egg
1 cup grated cheese (any kind or a combination) I have used grated Parmesan and Havarti, Cheddar and Mozzarella
Preheat oven to 400 degrees
Place pie shell in pie plate. Put several pats of butter in shell. Bake in oven for 10 minutes until butter melts. Meanwhile, peel and slice tomatoes. Remove seeds, jell and liquid. Place on paper towels and sprinkle with salt to draw out moisture. Let sit for 20 minutes. Sprinkle bacon in bottom of pie shell. Pat tomatoes dry. Layer tomatoes in pie shell, sprinkle with pepper if desired, basil, parsley, and chopped bell pepper. Mix mayo, egg, and cheeses together. Spread over pie. Bake for 30 minutes. Cool, slice, and serve.
Be careful with additional salt. The tomatoes are still salty and so is the cheese.
