1 can (12oz) evaporated milk
1 can (8-10 oz) sweetened condensed milk
1 tsp vanilla extract
5 Eggs
1.5 cups white sugar

Caramel:
Melt sugar in small sauce pan or Teflon skillet on high heat. Stir carefully so it does not burn. When sugar starts to melt turn to medium heat. Work out lumps while stirring. Continue to stir till you get a nice caramel glaze. Por caramel into mold (Danish cookie tins). Wear gloves and VERY CAREFULLY coat mold with HOT caramel. Make sure to coat the mold's floor and 3/4 up the side. Set aside to harden.

Batter:
Blend eggs in blender, med speed for 30 sec. Continue blending and pour in condensed milk slowing so it mixes well. Pour in evaporated milk and add vanilla. Blend 30 more seconds. Using a strainer, pour batter into mold. Cover with foil.

Oven:
Bake in water bath @ 350 degrees for 1.5 hrs. Place flan mold in large, deep oven pan. Fill oven pan with enough water to cover half the height of the mold. Bake for the first hour covered with foil. For the last half hour, bake uncovered. Remove and let stand for 2hrs. Best when cooled over night in fridge. To serve, place large serving plate over mold and flip onto plate. Caramel will drip onto plate. Enjoy!
