Pecan Tassies Recipe

1 c. margarine
1 (3 oz. pkg) cream cheese
1 c. sifted all purpose flour

Filling:
1 egg
3/4 c. firmly packed light brown sugar
1 tbsp. melted margarine
Dash of salt
few drops of Vanilla
1/2 c. pecans (coarsely cut)

let margarine soften in mixing bowl (at room temperature 1 hr) add cream cheese & work with wooden spoon until smooth & creamy
(Scrape bowl & spoon)
Add flour in 1/4 blending thoroughly. After each addition.
Work with fingers into smooth blended dough. (if desired refrigerate for easier shaping.
Pinch off small pieces of dough and shape into balls (about 1 1/4 inches in diameter)
Put each ball into cup of muffin pan.
With thumb press against bottom (edges lining cup evenly with dough)

FILLING:
Beat egg, add sugar gradually (beating well after each addition).
Add margarine, salt & vanilla (mix well)
Sprinkle a few pecans in bottom of dough lined cups using half the nuts (not quite filling cups) then sprinkle with remaining nuts.
Bake until filling is almost set
Reduce heat to 250º
bake 10 minutes more until filling is set.
Cool & carefully remove & place on racks.
