1 1/2 - 2 lbs. Salmon in a chunk
4 C. cider Vinegar
2 C. White Vinegar
3 C. Brown Sugar
3 oz. Whole Pickling Spice
2 medium White Onions Sliced.
1T. Salad Oil
4 Bay Leaves
Red Chili Peppers.

Add Vinegar, Sugar, and Spice together in a saucepan and gently simmer for 2 1/2 hours. Remove from heat and add the oil. Wrap salmon in cheesecloth, place in a kettle of boiling water to which has been added 1 1/2 T. Salt for each quart of water (water should cover the fish) Cover and gently simmer (DO NOT BOIL) fir 25-30 minutes. Do not overcook. fish should remain firm. Drain and chill. Cut fish into small chunks. Put a layer of sliced onion and a bay leaf in the bottom of each sterlized pint jar. add fish to within one inch of the top. Cover fish in the jar with the sauce, and top each jar with another layer of onion and a couple of chili peppers. Seal. Let stand for several days before serving. Makes 4 pints.

Someone made this for a family wedding reception and was SOOOO delicious! I try to make some whenever I can get a salmon,. Do Not use FARMED salmon. It is too oily.
