1/4 cup Fleishmann's canola oil spread
3/4 cup sugar
1 egg
2 cups flour
1/2 tsp soda
1/2 tsp baking powder
1/4 tsp salt
3 Tbsp sour milk
2 large almost black mashed bananas
(sour milk-mix 1 cup milk with 1 tbsp white vinegar. Let stand for 15 minutes)

Using a hand mixer cream sugar and shortening. Add egg. Sift dry ingredients together.Using a hand mixer add remaining ingredients with dry mixture to sugar and eggs. Pour into a greased 5x9 inch loaf pan. Bake 1 hour on 350.

This can be made into muffins using a muffin tin. Cook for 20 to 30 minutes. Then test to see if done with toothpick.
