2/3 cup tub margarine (Fleischmann canola oil)
1 cup sugar
3 eggs
3 cups flour
3 tsp baking powder
1 tsp salt
1 cup milk
1/2 a container fresh blueberries or as many as you would like
1 tsp pure vanilla extract

Directions:
Directions:
Cream shortening and sugar until fluffy. Add eggs, one at a time beating well after each one. Sift together flour, baking powder and salt. Add vanilla to milk. Add dry ingredients to shortening and sugar mixture alternately with milk. When well blended, add blueberries. This mixture will keep in the refrigerator for two weeks. Bake in greased muffin tin at 375 for 15 to 20 minutes.

Test muffins with toothpick or knife, if still wet on inside continue to bake. Pour about 1/2 cup of batter into each cup of the muffin tin.
