12 large sea scallops
12 slices of bacon
8 spinach leaves, washed/stemmed
2 T. melted butter
2 lemons, halved
4 bamboo skewers
Apricot Chutney for dipping:
1 c. Smucker's apricot marmalade or preserves
1/2 c. shredded horseradish, strained
2 tsp. fresh-cracked pepper

Directions:

Heat oven to 350º, place bacon strips on a wire rack and cook until half done, 14 minutes. Remove bacon and turn on broiler. Wrap each scallop with a bacon slice. Slide 3 bacon wrapped scallops on each skewer, leaving an inch gap between each. Place skewers in buttered pie tin and brush each side with melted butter. Place in broiler for 8 minutes total, turning the skewers after about 4 minutes. Remove from oven. Make dipping sauce by whipping apricot marmalade, horseradish and pepper in a stainless steel bowl and refrigerate. To serve, place 2 spinach leaves in center of each plate. Place 2 oz. of apricot mixture on a spinach leaf for each plate, place lemon half as well. Remove scallops from skewers and arrange 3 scallops on the other spinach leaf of each plate. Serve immediately.
