1 lb. Cheddar cheese, grated
8 oz. Bleu or Roquefort cheese (to taste - you want subtle vs. strong flavor)
3 - 8 oz. pkgs. cream cheese
5 oz. Extra Sharp Cracker Barrel Cheese, grated
Red pepper (to taste)
Garlic salt (to taste)
1 tsp. Worcestershire sauce (or more, to taste)
1/4 tsp. sugar
Dash of horseradish (to taste)
Dollop of sour cream
Dash of lemon juice (to taste)
Pecans, walnuts, or almonds, finely chopped
Paprika mixed with small amount of chili powder (to taste)
Various crackers for serving

Directions:
Directions:
Mix all ingredients, except nuts and paprika mixture. Taste-test as you go and add more seasonings if you like. Add more or less sour cream to help the mixture achieve a creamy texture (but not so creamy it falls apart). When adding the red pepper and garlic salt, mix in small increments at a time as these can easily overpower the mixture. Refrigerate.

When cheese mixture is cold, form into a large ball, sprinkle on the paprika mixture, then sprinkle on the nuts. Place on a serving dish and garnish with curly lettuce around the ball. Indent a hole in the top of the ball and insert pretty, crisp lettuce leaves to fan out. Serve with crackers. Have several knives available so more than one person can serve at a time.

Variations:
1. Add sliced, stuffed olives
2. Add bacon bits and minced onions (don't freeze this one)
3. Roll in minced parsley
4. Add Liquid Smoke flavor

This can be made a week in advance. It will freeze indefinitely.

I also made many smaller cheese balls out of this recipe and gave them as Christmas gifts. To do this, roll cheese mixture into several smaller balls, wrap in plastic wrap and foil, then refrigerate or freeze until ready to use. Roll in paprika and nuts before serving or delivery.
