1 lb. ground chicken
1/2 lb ground pork or 2 (spicy or mild) italian sausage links
1/4 cup chopped onion
2 cloves minced garlic
1-28 oz. can whole tomatoes
2 small cans tomato sauce
1 can water
1/2 cup sliced mushrooms
1/4 cup chopped fresh parsley
1 tsp. salt
1 tsp oregano
1/4 tsp thyme
1 or 2 bay leafs
Or just add 1 Tbsp italian seasoning

Brown ground sausage or sausage links in big dutch oven or fry pan. Drain some of the fat. Return meat back to the pan & add the minced onion & the ground chicken and continue browning. Once browned, drain fat if necessary. Return all to pan & add sauces, tomatoes & seasonings. Add the can of water if desired. You can add a dash of red wine if you wish. Let all simmer until it smells (and tastes) really good :)

I make this sauce with multi grain thin spaghetti noodles, but you can use whatever kind of noodles you like.
Make with french bread or just a salad
