3 cups sifted cake flour
2 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup (1 1/2 sticks) soft butter
1 1/2 cups sugar (only use pure cane sugar)
1 teaspoon vanilla
3 eggs
1 cup milk

Directions:
Directions:
1. Preheat oven to 350º. Grease well and flour three 8x1 1/2-inch or two 9x1 1/2-inch cake pans.

2. Sift flour with baking powder and salt; set aside.

3. In large mixer bowl, at high speed, beat butter, sugar, eggs, and vanilla until light and fluffy, about 5 minutes, occasionally scraping bottom and sides of bowl, and guiding mixture into beaters with rubber scraper.

4. At low speed, beat in flour mixture, in fourths, alternately with milk, beginning and ending with flour mixture. Beat only until smooth, about 1 minute.

5. Pour batter into prepared pans; bake 30-35 minutes, or until surface springs back when gently pressed with fingertip.

6. Cool in pans 10 minutes. Remove and cool thoroughly on wire racks. Fill and frost as desired.
