3/4 Cup cooking oil
1 1/2 cup flour
1 tsp soda
1 tsp salt
1 cup grated carrots (packed)
1/2 cup chopped nuts
1 cup sugar
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
2 eggs

Directions:
Directions:
Mix sugar and oil. Add flour and other dry ingredients. Add grated carrots and add eggs last. Cook in greased loaf pan 350 degrees for 50-60 min or until a toothpick inserted in the center comes out clean.
