9" single-pie crust
1 1/2 c packed brown sugar
1/3 c water
4 Tbsp +1 1/2 tsp. quick cooking tapioca
4 1/2 c fresh or frozen chopped rhubarb, thawed
TOPPING:
1 c old-fashioned rolled oats
1/2 c packed brown sugar
1/4 c cold butter

Directions:
Directions:
Line a 9" pie plate with pastry. Trim pastry to 1/2" beyond edge of plate and flute edges; set aside ....
OR use a prepared pie crust.

In a bowl, toss brown sugar, water, tapioca and rhubarb; let sand for 15 minutes.
Pour into crust.
For topping, combine oats & brown sugar in a bowl.
Cut in butter until crumbly.
Sprinkle over filling.

Cover edges loosely with foil.
Bake 375 * 45 minutes.
Remove foil
Bake 10 to 15 minutes longer or until browned and bubbly.
Cool for 3 hours before cutting.
