desired chicken pieces to serve -- washed and patted dry
2/3 cup quick oatmeal
1 tsp. onion, garlic, paprika & dry mustard
1/2 tsp. salt, pepper & thyme
Dijon mustard

Directions:
Directions:
Preheat oven to 400*

Coat the chicken pieces in Dijon mustard.

Combine all of the oatmeal and seasonings and mix well.

Roll the Dijon chicken pieces in the oatmeal seasonings mixture.

Place pieces loosely on the sprayed baking pan.
Lightly spray Pam over chicken pieces, before baking.
Bake 400* 30 minutes, turning over after about 20 minutes, spray lightly again with Pam and bake another 10 to 15 minutes.
