2 c water
2 c milk
1/2 c butter
1 c quick cooking grits
2 eggs
11 oz Mexican style corn -- drained
4 oz chopped green chilies
1 c shredded Mexican cheese blend
1 tsp salt
1/4 tsp pepper
1 c shredded Parmesan cheese

Directions:
Directions:
In a large saucepan, bring milk, water and 1/2 cup butter to a boil.
Slowly stir in grits.
Reduce heat; cook and stir for 5 to 7 minutes.

In a small bowl, whisk eggs.
Stir a small amount of hot grits into eggs; return all to the pan, stirring constantly.
Add the corn, chilies, Mexi cheese, salt and pepper.

Transfer to a greased 2 quart baking dish.
Sprinkle with Parmesan cheese.
Bake, uncovered, 350* 35 to 40 minutes or until a knife inserted near the center comes out clean.
