1 gal. kosher dill pickles, whole
5 lg. cloves garlic, minced
4 1/2 c. granulated sugar
1 sm. bottle Tabasco sauce or to taste (start with 1/2 bottle)
2 1/2 T. celery seed

Directions:
Directions:
Drain and rinse pickles thoroughly and cut into 1/4 to 1/2 in. rounds. Place in a large bowl. Add garlic, sugar, Tabasco sauce and celery seed. Mix all really well and return to the original pickle jar. Store in the refrigerator. Shake and turn jar several times per day until sugar is completely dissolved.

Yields close to 1 gallon.

After 1 day of shaking and turning, it is a good time to taste the pickles. You should be able to tell at that point if you need more Tabasco sauce. If so, add a little bit and shake and turn. The next day, taste again. Remember: You can always add more but you can't take any away.
