2 C Edamame, frozen and shelled
1 T Soy Sauce
1 tsp Tahini (sesame paste)
1/2 tsp Sesame oil
1 1/2 tsp Lemon Juice
1/2C Olive Oil
TT Salt

Directions:
Directions:
* In a medium pot bring 4 cups salted water to a boil.
* Add the edamame and cook for 3-4 minutes
* In a food processor add the boiled edamame, soy sauce, tahini, and sesame oil.
* Process until a little chunky, scrape the sides and add the lemon juice. continue to process and scrape.
* While the food processor is running, slowly add in olive oil until the mixture is smooth and creamy (you may not need all of the oil)
* Adjust seasoning with salt and lemon juice.
* Serve with vegetables, crackers or as a spread on a sandwich.
