2 Tbls Vegetable oil
4 Tbls Fresh ginger, peeled & finely chopped
4 @ Garlic cloves, minced
6 Tbls. Asian sesame oil
4 Tbls. Soy sauce
2 Tbls. Rice vinegar
3 Tbls. Sugar
1 Tbls. Red pepper Flakes
1 1/2 tsp Salt
1 lb. Straight long pasta, cooked & cooled
6 @ Green onions, thinly sliced
1 C Carrot, peeled and grated
1 @ Red Bell Pepper, small diced
2 @ Celery stalks, cut on bias
˝ bnch Cilantro, chopped
1/2 C Peanuts, Coarsely chopped

Directions:
Directions:
• Get a large pot of salted water up and boiling.
• Add the pasta to the boiling water and cook until done…about 7 minutes. Strain the noodles out of the water and run cold running water over the noodles making sure none of the noodles are sticking together. Toss noodles with a little sesame oil to keep from sticking together. Then set aside.
• Heat the vegetable oil in small skillet over medium heat. Add ginger and garlic; sauté 1 minute. Transfer to large bowl. Add the next 6 ingredients to the large bowl then whisk to blend.
• Add the cooked noodles to the large bowl with the ginger soy sauce mixture.
• Add vegetables and cilantro. Toss to coat noodles with all of the ingredients.
• Stir in the peanuts and toss again. Season to taste with salt and pepper. Serve at room temperature.
