Ingredients: 1 T Oil 1 piece Bacon, small diced 1 Small onion, diced 1 stalk Celery, diced 1 clove Garlic, minced 2 Medium Potatoes, small diced ¼ C Flour 1 can Minced clams, with broth ½ C Whole Milk 1 can Evaporated milk 1 tsp Thyme, dried To Taste Salt and Pepper

Directions:• In a medium sauce pot over medium heat, heat the oil until hot but NOT smoking. • Add the diced bacon to the pot and allow to brown and slightly crisp. • Add the onion, celery and minced garlic to the pot and stir until they become translucent. Add the small diced potatoes and stir to incorporate. • Sprinkle the flour into the pot and whisk until well combined with the oil in the pot. Allow the mixture to bubble. • Add the minced clams along with the broth from the can. Allow the juice to come to a slight simmer then add the whole milk and the evaporated milk. Turn the heat up to medium high and continue to stir. • Allow the soup to come up to a boil. Once it comes to a boil, turn down the heat and allow to simmer 15 minutes or until the potatoes are cooked. Check the consistency of the soup, if too thick, add a little water. If too thin keep simmering until it becomes slightly thicker. • Season the soup with salt and pepper to taste. Add the dried thyme, taste and adjust the seasoning. • Serve hot and with crackers or bread |
