12 oz. Semi-sweet chocolate
6 oz + 1 T Butter
1 C Sugar
4 Eggs
¾ C Flour
1/3 C Berry Compote or berry jam

Directions:
• Using a double boiler, melt 6 oz (1/2 of the chocolate) and the 6 oz. of butter. Stir until the butter is incorporated and the chocolate is melted, then set aside.
• In the standing mixer, whisk together the sugar and the eggs until it is foamy (about 1 minute).
• On a low speed, gradually whisk in the melted chocolate to the eggs and sugar. Make sure to use a rubber scraper to get all of the chocolate out of the bowl.
• To the newly mixed eggs and chocolate, add the flour. Whisk on low speed until well combined.
• Using the rubber scraper, pour the batter into the prepared pan and place in the oven. Bake in the oven for about 35 minutes or until a toothpick inserted comes out with moist crumbs.
• Let the “cake” cool in the pan overnight.
• Using a double boiler, melt the remaining chocolate and 1 T of butter. Make sure it is completely melted and well combined with the butter.
• Pour the melted chocolate over the truffle cake. Tilt the pan to coat the entire top.
• Swirl in the 1/3 C of berry compote and place back into the refrigerator until the glaze has set completely…about 30 minutes.
• Once the glaze is set, cut into 9 bars, serve and eat!
