1-1/2 c. soy sauce
1-1/2 c. packed brown sugar
3/4 c. sherry
3 T. dried minced onion
2 T. ground cinnamon
3/4 c. olive oil
1/8 t. garlic powder
6 lb. pork loin

Directions:
Directions:
Heat oven to 325º
Mix all ingredients well (minus pork loin). Place marinade and pork loin in a large pan and refrigerate for 6 to 12 hours. Turn frequently.
Place pork in the pan you will cook it in and bake for 3-1/2 hours or until pork reads 185º. Baste frequently (scraping up brown sugar and onions as well).
Let sit 5-10 minutes before slicing.
