Andes Mint Cookies Recipe

2 boxes Andes mints (preferably light green, creme De menthe color)
3/4 c. butter
1 1/2 cups of brown sugar
2 eggs
1 1/4 tsp soda
2 tblsp. water
2 cups choc chips
1 1/2 cups of flour
1/2 tsp salt

cook 350
over low heat, cook butter, sugar and water until melted
Add chips. Stir until partially melted
Remove from heat and stir until chips are fully melted
Pour into large mixer bowl and let stand 10 minutes to cool.
At high speed, beat in eggs.
Reduce to low and add dry ingredients, beating until blended
Chill 1 hour

Line cookie sheets with foil. roll tsp. of dough into balls. Place 2" apart. Bake (Cookies crisp as they cool.) Upon removing from the over, immediately place 1/2 to 1 complete Andes mint on cookie. (By breaking one mint in half, there seems to be enough mint to spread on cookie.) let mint melt slightly. Swirl with toothpick. Remopve from foil, cool
