24 vanilla wafers
2-8 oz packages cream cheese, softened
½ cup sugar, plus 3 Tbsp of sugar
4 Tbsp coconut extract
2 eggs
8 oz sour cream
½ cup toasted coconut
¼ cup sweetened coconut

Directions:
Directions:
Preheat oven to 350°. Line cupcake pan with cupcake liners. Mix cream cheese with ½ cup of sugar for 2 minutes or until smooth. Then add in the coconut extract and add 1 egg at a time and mix before you add the 2nd egg. Then put 1 vanilla wafer in bottom of the paper cupcake liner. Then spoon mixture over the wafer. Put in the oven for 13-15 minutes. Then let them cool completely. While they are cooling mix the sour cream with 3 Tbsp of sugar, I added about ¼ cup of sweetened coconut to this. When the cakes are cooled spoon the cream on to the cakes and spread to cover the top of the cake. Then top with the toasted coconut.
