3 lbs. whole milk ricotta
2 c. sugar
½ c. sifted flour
8 egg yolks
1 lemon rind zest
1 tsp. vanilla
½ c. whipped cream
8 egg whites
graham cracker crumbs

Directions:
Directions:
1. Beat ricotta until smooth, gradually adding 1 ½ c. sugar and egg yolks
2. Add flour, vanilla, and lemon zest
3. Beat eggs whites with ½ c. sugar well fold in whipped cream and add to ricotta mixture
4. Pour into a 12 inch spring form pan that has been well buttered and sprinkles with graham cracker crumbs. Bake in preheated oven at 425 for 10 mins. lower temperature to 350 and bake for 1 hour. Turn off heat and allow to cool in oven with door closed
