4 ripe Haas avocados, 3 Tbls freshly squeezed lemon juice (1 lemon), 1/2 cup small diced red onion (1 small onion), 1 large garlic clove, minced, 1 tsp kosher salt, 1 tsp ground pepper, 1 medium tomato, seeded and small diced

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Immediately add lemon juice, onion, garlic, salt & pepper, toss well.( I use a food processor lightly run through)) THEN add tomatoes. Mix well and taste for salt and pepper.

This is Barefoot Contessa's recipe. It is the best we have tasted. It is not spicy. If you like spicy, add a few dashes of hot sauce before blending.
