2 (15 oz) containers dried apricots, 2 1/2 cups pitted dates, 3 Tbls brown sugar, 2 1/2 cups raisins, 2 cups white vinegar 1 Tbls mustard seed, 1 Table salt, 2 tsp ginger, 1 tsp coriander.

Chop and then soak apricots in enough water to cover for 30 minutes. Drain and place in a large sauce pan. Chop dates and add apricots. Add remaining ingredients and simmer over low heat until thickened, stirring frequently; Ladle hot chutney into hot jars, leaving 1/2 " of head space. Adjust two piece caps. Process 10 minutes in a boiling water bath.

Makes about 14 1/2 pint jars

These are wonderful to place on top of 4 (oz) cream cheese and serve with assorted crackers for Christmas or Thanksgiving appetizers or gifts.
