1 c. yellow cornmeal
1/2 c. skim milk
1 egg white
1 T. canola oil
1 tsp. paprika
1 tsp. baking powder
1/2 tsp. salt

Directions:
Directions:
Combine cornmeal, baking powder, paprika and salt in a large bowl and mix.
In a smaller bowl, whisk together milk, egg white and oil until smooth.

Combine both mixtures and stir until batter is incorporated. Shape batter into 1 1/2 in. balls and place 1 in. apart on a baking sheet sprayed with non-stick spray. Bake in an oven preheated to 425º until tops are firm and golden brown (approx. 10 to 15 minutes). Can be served immediately.
