1 lg. head cauliflower, trimmed and soaked in salt for 15 minutes
2 T. butter
2 T. flour
1/4 tsp. salt
White pepper
1/2 c. grated cheese
(your choice, cheddar, Parmesan or Emmentaler)
3 strips bacon
1/2 c. bread crumbs fried in butter

Bring about 2 inches of water to boil in a large pot, place cauliflower head upright in the water, cover and cook for 5-7 minutes until fork tender but not soft. Drain, but retain 2 c. of the water. Melt butter in a small frying pan, stir in flour. Cook until golden, stirring constantly, add retained water,blend well with whisk. Cook until thick, add salt and pepper. Place cauliflower upright in greased casserole, pour sauce over. Sprinkle with cheese, add additional pepper if desired. Lay on bacon strips. Bake in 400 degree oven for 20-30 minutes, until golden. Sprinkle bread crumbs over all just before serving.

It isn't necessary to add the bacon strips, which may make it rich for some tastes. I like this recipe because if you have vegetarian guests for your meal this gives them a treat. Take out cheese and bacon if appropriate.
