5 lb meat - coarsely ground;
8 chili pods - seeded & washed;
3 T ground gomina (cumin);
1 T ground oregano;
4 large onions chopped;
6 cloves garlic chopped;
1 T salt
1/2 tsp black pepper

Directions:
Directions:
Put suet in meat to desired richness. Pods ground in good chopper, you can get them preground if desired - 1 tsp of ground pod to 1 pod. Chop onions - if ground they are bitter - garlic the same. Braze meat until browned in suet that it contains. Put in enough water to boil. Put in rest of spices, onions, garlic. Boil slowly 3 hours.

This is word for word from the recipe Frank gave me when we got married. Unfortunately, we've not been able to master it like he did. Mike said apple pie with a slice of cheese was usually served with the chili. Mike also shares that this is the chili Frank served to his customers at his Kansas City restaurant in the '20s. Later during the depression he made fried pies and would go out and sell them. He would take the money he made selling them to buy ingredients to make more the next day.
