Nonstick cooking spray
1-1/2 c. whole-wheat flour
1-1/2 c. all-purpose flour
1 c. sugar
1/2 c. chopped pecans
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
6 egg whites
1 c. applesauce (unsweetened)
1/2 c. buttermilk
2-1/2 c. grated zucchini

Directions:
Directions:
spray two 9 x 5 inch loaf pans with nonstick spray. In large bowl, combine the whole wheat flour and the all purpose flour, sugar, pecans, cannamon, baking soda, and baking powder. In another bowl mix the egg whites, applesauce, and buttermilk. Mix in the zucchini. Then combine with the flour mixture.

Pour the mixture into the loaf pans. Bake at 350º (preheated), for 45 minutes to an hour. Insert toothpick and if it comes back up clean, it is done. Cool in pan 5 minutes then on wire rack.
