2 c. Jasmine rice
1 large chopped onion
2 tbsp. olive oil or canola oil
1/2 tsp. salt
1 quart container of low sodium chicken broth

Directions:
Directions:
Use the usual rice pot but oil the bottom and put on a medium heat. Add the chopped onion and the two cups of rice. Brown the rice til the onions look translucent and the rice looks as if it's browning in places...but keep stirring.

Add salt, and pour chicken broth into the pan until it is about a half inch over the top of the rice. Put a lid on the pot and simmer on low for about 15-20 minutes. Add parsley and mix when done. The rice will be perfect every time.
