3 cloves Garlic, minced
Olive Oil
6 large Onions
5 Green Peppers, finely chopped
6 lbs. Ground Beef
5 cans (16 oz. each) Italian style Tomatoes
5 cans (16 oz. each) Kidney Beans, drained
2 cans Tomato Paste
2 tsp. Red Wine Vinegar
5 whole Cloves
3 Bay Leaves
4 tbsp. Chili Powder (or more if you like)
4 drops Tabasco Sauce (or more if you like it spicy and hot)
2 tsp. Cumin
1 tbsp. Sugar
Salt and Pepper to taste

In a large Dutch Oven saute the garlic in some olive oil and remove to a small bowl. Saute the onions and peppers in the same pot until the onions are golden, then remove and drain. Add the ground beef to the pot and separate with a fork, cooking until the meat is cooked through and grey in color. Drain off any accumulated fat.

Add the, garlic, onions and peppers to the meat and mix well, and then add all the remaining ingredients.

Cover and simmer on low heat for 1 hour. Remove the cover and simmer for another hour.

Remove the cloves and bay leaves before you serve.

This is a great and easy recipe. Good toppings include: grated cheddar cheese, finely chopped onions, and sour cream.
