1-10 oz. pkg. frozen chopped spinach, cooked and spun dry or squeezed dry
1-1/2 cups panko bread crumbs
1/2 c. freshly grated Parmesan cheese
1/4 c. crumbled cooked bacon
1/8 tsp. garlic powder
1/8 tsp. freshly ground pepper
3 eggs
1/2 stick butter, melted
Olive oil for frying

Directions:
Directions:
Combine the first 6 ingredients in a large bowl. Mix in eggs and melted butter. Roll into 1" balls. Heat oil in heavy, large skillet over high heat. Fry balls in batches until golden brown or for about 2 minutes. Drain on paper towels and serve warm.
