1 box Acini Di Pepe (small macaroni balls)
1 cup sugar
2 tbs flour
1 3/4 cup pineapple juice
2 eggs beaten
1 tbs lemon juice
1/2 tsp salt
2 ( 11 oz. ) cans mandarin oranges
2 (20 0z.) cans chunk pineapple
1 (20 oz.) can crushed pineapple
2 cups miniature marshmallows
1 cup grated coconut (optional)
1 (9oz.) container cool whip

Directions:

Cook macaroni in boiling, salted water until tender. Rinse in cold water, drain and cool. In a saucepan, combine sugar, flour, salt, pineapple juice and eggs. Cook until thick and smooth. Add lemon juice and cool. Combine the sauce and macaroni and let set for a while, then add the fruit, coconut, marshmallows and cool whip. Chill over night.

This salad is often requested when we have get togethers. IT is known as "Frog Eye Salad" because of the little macaroni balls. A good enjoyable salad !
Serves a lot. Can make 1/2 recipe, which serves 12.
