1 lb chicken tenderloins, cut into bite size pieces.
1/8 tsp of pepper
2 Tbsp canola oil, divided
1 medium onion
1 small green pepper, finely chopped
1 small sweet red pepper, finely chopped
1 can (8 oz) sliced water chestnuts, drained and finely chopped
1 can (4 oz) mushroom stems and pieces drained and finely chopped
2 garlic cloves
1/3 cup of stir fry sauce
1 tsp soy sauce
1/4-1/2 cup of peanuts salted
2 tsp minced fresh cilantro

Sprinkle chicken with pepper and stir fry in 1 Tbsp of oil until no longer pink. Remove and set aside.

Stir-fry onion and peppers in remaining oil for 5 minutes. Add water chestnuts, mushrooms, and garlic. Stir fry for 2-3 minutes longer of until veggies are crisp-tender. Add stir fry sauce and soy sauce. Stir in chicken and heat through. Add peanuts.

Place 1/2 cup chicken mixture on each lettuce leaf and sprinkle with 1/4 tsp of cilantro over each. Fold lettuce over filling.
