1 12-oz package frozen noodles (I use "Reames")
1 lb chicken breasts, cut into bite-sized pieces
3 Tbsp olive oil
2 Tbsp minced garlic
1 large onion
1 cup chicken stock
2 tsp salt
1 tsp pepper
2-141/2 oz cans of diced tomatoes (if available use basil,garlic,oregano variety)
2 cups fresh basil, chopped
1 cup fresh Parmesan cheese, grated

Directions:
Directions:
Cook Noodles per package directions and set aside.
In soup pot, saute chicken pieces, onion and olive oil until onions are transparent and chicken is done. Add garlic, salt and pepper. Saute for 1 minute more. Add diced tomatoes and chicken stock. Heat until mixture is boiling. Then add noodles and 2 cups of fresh basil. Bring mixture back to a boil and serve immediately. For added serving appeal, top off each serving with cheese and favorite crackers.
