Ingredients: • 1 whole rabbit • Flour – about a cup • Vegetable of canola oil – about a cup • 1 large sweet onion • 1 large green bell pepper • 4 stalks of celery • 3 cloves of garlic • Chicken stock – 4-5 cups • Seasoning mix • Salt • Pepper • 3 bay leaves • Light colored beer

Directions:1. Cut rabbit into 6 pieces: (2) front quarters, (2) hind quarters, and (2) back pieces 2. Rub a small amount of oil onto rabbit and season with spice mix. 3. Dust rabbit pieces in flower. 4. Brown rabbit in a pot over medium –high heat. 5. Remove rabbit, cover and set aside. 6. Make a light brown roux with some of the flour and oil (about ½ cup of each) 7. Add in chopped vegetables and cook until softened but not soft 8. Deglaze the pan with ½ a cup or so of beer 9. Add in chicken stock to about half way up the pot 10. Add bay leaves and season 11. Simmer for 10 minutes then taste and add more seasoning if necessary. 12. Be careful not to over season. There will be some seasoning left on the rabbit that will come off when you add it back in. 13. Add rabbit back in and make sure it is covered in sauce. 14. Simmer for 45 minutes to an hour or until rabbit is tender
