1 lb. ground beef
1 lb. ground pork or turkey
2 16-oz. cans chili beans
1 14.5-oz. can diced tomatoes
1 15-oz. can tomato sauce
1/2 c. sugar
2 Tbsp. cinnamon
Red pepper flakes to taste
Spaghetti pasta
Cheddar Cheese

Mix all ingredients except pasta and cheese. Slow-cook on low in Crockpot or similar for 4 hours. Serve over spaghetti. Top with cheese.

Growing up in Charleston, WV in the 70s and 80s, there was still some sense of isolation from the wider world. Thus whenever a new chain restaurant would open up in town, it had quite a bit of novelty. Skyline Chili, a chain out of Ohio, opened a restaurant in the Town Center Mall in the early 80s, and my family, ever eager to try the latest novelty, went there often. They served chili in a way none of us had seen before: over pasta with copious amounts of cheese on top. It was also spiced and flavored in a very different way than what we were used to: cinnamon was its key spice.


Well, Skyline didn't last long in Charleston. But as I learned to cook, I started trying to duplicate their way of making chili. What I came up with was nothing like what they served, but that's okay. Like most good chili recipes, it started to take on a life of its own. I've made this often and it never quite comes out the same way twice. But I serve it over pasta, with copious amounts of cheese on top, and remember those days with my family when we were ever eager to try out whatever new thing came to town.
