Spinach Casserole Recipe

3 (10 oz). pkgs. frozen chopped spinach
1/2 cup butter
1 onion, chopped
1/2 cup Parmesan cheese
1 cup sour cream
1 6 oz. jar artichoke hearts, halved and drained

Directions:
Directions:
Cook spinach according to package directions and drain thoroughly. Add butter and all but a sprinkle of Parmesan cheese. Add cream. Mix thoroughly. Place in 1-1/2 quart casserole. Top with artichoke hearts and remaining cheese. Cover and bake at 350º for 25 to 30 minutes until light brown and bubbly. Before serving, sprinkle on a little more Parmesan cheese.
