6 medium potatoes, peeled
1 large onion, grated
2 eggs
2/3 cups flour
2 tsp. salt
1 tsp. pepper
Vegetable oil for frying

Directions:
Directions:
Grate peeled potatoes coarsely, using hand grater or food processor. Drain thoroughly, getting as much moisture out of the grated potatoes as possible. Add grated onion, eggs, flour, and salt and pepper, stirring until combined. Heat oil in heavy frying pan (cast iron works best) and spoon batter into oil, making 3 inch rounds. Brown on one side, turn and brown on other side. Brown slowly so pancakes will cook completely. Drain and serve with sour cream, onion dip, or applesauce.

This is Grandma Mary's recipe. She grated her potato finely; Dad and I like to grate ours coarsely. My Grandpa Miller made these, too. He called his German version "Kartoffelpuffer."
