"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Wash beans, place in a 6-quart pot, and cover with water. Bring to a boil, cover, allow to boil rapidly for 5 minutes. Remove from heat and set aside for 1 hour. Beans will have absorbed most of the water. Put back over medium heat, add water to cover, and then add the remaining ingredients, except for the salt, pepper, and cilantro. Cover and simmer for at least 2 to 3 hours. Add salt, pepper, and cilantro to taste shortly before serving time.

These beans were a hit when Will made them for Mrs. Hammon's World Geography class. They make an outstanding accompaniment to any Mexican dinner or barbecue.
