300g boneless firm white fish, chopped
peeled medium uncooked king prawns, coarsely chopped
1/4 cup Thai red curry paste
1 tbsp caster sugar
1 tsp fish sauce
3 snake beans, finely chopped
1/2 cup finely chopped coriander leaves
6 kaffir lime leaves, shredded
vegetable oil for shallow frying

Dipping Sauce
1/2 cup sweet chilli sauce
1 tbsp lime juice

Directions:
Directions:
Blend or process fish, half the prawns, curry paste, caster sugar and sauce until just combined.
Transfer mixture to a medium bowl. Stoir in the remaining prawns, beans, coriander and half the lime leaves.
Moisten hands slightly with water to prevent the mixture from sticking. Roll two tablespoons of mixture into a ball, flatten slightly; repeat with remaining mixture. Press remaining lime leaves onto outside of fish cakes. Shallow fry fish cakes in batches in hot oil until browned on both sides and cooked through. Drain on absorbent paper.

Combine sauce and juice in small bowl
