3 c. shredded hash brown potatoes
1 c. shredded cheddar cheese
1c. cooked ham or cooked bacon, I prefer bacon!
1/4 c. sliced green onions
4 eggs, beaten
1-- 12 oz can evaporated milk
1/4 tsp pepper
1/8 tsp salt

Directions:
Directions:
Grease a quart size square baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham or bacon and green onions. In a medium bowl, combine eggs, milk, pepper and salt. Pour egg mixture over potato mixture. Bake uncovered at 350º for 40-45 minutes or until center appears set. Let stand 5 minutes before serving. Serve with biscuits, fresh fruit or muffins!
