1 cup long grain rice
2 Tbsp. cooking oil
1 large onion, chopped
2 beef bouillon cubes
1 jalapeņo pepper, seeded and chopped
Velveeta cheese

Directions:
Directions:
Cover the bottom of a large skillet with oil. Add rice and onion and cook over medium heat until onion is tender and rice begins to brown. Add water, bouillon cubes and chopped jalapeņo pepper. Cover top with slices of Velveeta. Cover, reduce heat and simmer for about 20 minutes or until all liquid is absorbed and the rice is fluffy .
